Edible packaging can protect product quality and safety, as well as the environment, by replacing fossil fuel-based materials and reducing solid waste. Edible packaging solutions have been associated with curiosity and generate feel-good emotions about performing sustainable behaviours. Consumers are generally concerned about the higher price of the edible packaging and the risk of damaging their health through the consumption of food allergens. Minimising changes to sensory attributes is a key concern for consumers when it comes to accepting edible packaging. Consumers are largely unaware of edible packaging, so they want more labelling to increase their knowledge and familiarity with it. Edible packaging offers a range of benefits for the product, consumer, and the sustainability of the food supply chain; however, it also presents challenges, and consumer acceptance of the technology cannot be assumed. Key management considerations relate to communication with consumers about the technologies and a pragmatic approach to when to utilise edible packaging.
