Abstract
This chapter explores an under-examined area within community tourism, namely the relationship between community-based homestays and local cuisine. It examines the influence of community-based homestay tourism on the local cuisine in the Himalaya with special reference to the Panauti Community Homestay (PCH) in Nepal. The chapter analyses the impact of homestays on regional cuisine in the Himalaya. It explores how tourism can bring about changes in local cuisine, in the context of community-based homestay in the Himalaya. To provide a greater understanding of the influence of homestay tourism on local cuisine, an in-depth analysis of the PCH is provided. The chapter focuses on the role played by the community homestay operation on the dynamics of local cuisine of the host community in Panauti, Nepal. It examines the role of community -based homestay tourism in the evolution of local cuisine and culinary traditions.
