Abstract

Enzymes Mannitol debydrogenase Aspergillus candidus Acetobacter suboxydans Torula utilis
Mannitol debydrogenase, which oxidizes mannitol to fructose, is probably responsible for the initial stage in the utilization of this polyol by many organisms and tissues. The present study is of the properties of this enzyme, especially the specificity, in cell-free extracts of Aspergillus candidus, Acetobacter suboxydans and Torula utilis.
